Spicy Summer Dishes

This take on fried rice looks to the sea for inspiration—we make the dish with fresh crab (if you can get it; use canned if you can't) and season it with fish sauce. We tend to prefer jasmine, medium-grain white, or sushi rice for this and all our fried rice recipes. Long-grain rice works, but it doesn't get the same chewy-tender texture as shorter varieties.

sp.jpgThe most famous ding in America is almost certainly kung pao chicken—you'll find it on pretty much any Chinese takeout menu in the country. Our version is made with bell peppers, celery, peanuts, and a mild sauce thickened with cornstarch. We use thigh meat for the diced chicken, which stands up to the heat of the wok better than white meat.

"It’s important to consider your main flavor and texture when pairing wine with Chinese food. If it is a dark sauce, like the plum sauces or soy based, these are high in sodium, so a wine that is high in fruit focus is best. Wines like Dolcetto, Barbera, Blaufrankisch for reds and Riesling, Sylvaner, Cortese, Prosecco and Champagne in general work best."— Molly Wismeier, Restaurant R’evolution (New Orleans)

Fried rice isn't just for using up day-old rice; it's also great for repurposing other leftovers in your fridge. We came up with this recipe with pork tenderloin in mind, but basically any meat you find yourself with would be appropriate. You can also sub out the sweet corn and shishito peppers for whatever you have on hand that sounds tasty.

To Finish : Bring a large pot of salted water to a boil. Add noodles and cook according to package directions. Drain. While noodles are cooking, heat oil in a wok or official source a small skillet over high heat until smoking. Add pork and preserved vegetable and cook, stirring and shaking constantly, using a spatula or a spoon to break up pork until cooked through, about 1 minute. Transfer to a small bowl and set aside.

"For Chinese food, acidity in wine is the key! With spicier food like Szechuan cuisine, I love off-dry Riesling. Especially from the Mosel valley in Germany. The sweetness and cold temperature of the wine will cool off your palate and the crisp acidity will cleanse your mouth and get you ready to eat more! For something fatty with a bit of sweetness like Peking duck, I've found that drier styles of Riesling are great or Chenin Blanc from the Loire valley."— Joe Campanale, L'Apicio, Anfora (NYC)

"There are usually many components to juggle; is the dish light or heavy, is the spice character low or aggressive, is the heat character mild or strong? With that said, here are some guidelines with a general range of dishes. Dim Sum can throw a dizzying amount of complex pairings your way. Stick with a high acid wine that also has significant weight. Riesling from Alsace (seek out the wines of Andre Ostertag) or Austria (Johannes Hirsch from the Kamptal is a rockstar!) would work great here and will keep your palate pristine in-between bouts with the steam cart. For spicy noodle, rice, or tofu dishes, texture and heat are the main concern. I like wines with softer acidity and a rounder texture as it will help balance the heat component. Gewurztraminer from Alsace (Zind-Humbrecht for a richer style) and Viognier from the Northern Rhône (any cuvée from Yves Cuilleron) or Central Coast of California (Morgan Clendenen’s Cold Heaven) are round and lush and can lend their own exotic profile to the dish. For smoked or roasted proteins with sweet sauces, such as Peking duck , red wine can be the go-to for you to build on the umami factor. A Barbera from Alba (Vietti’s bottling from the Scarrone vineyard is a prime example) or a Sonoma Coast Pinot Noir (look for Failla from Ehren Jordan) will be dexterous with their acidity and high- toned red fruit."— Ehren Ashkenazi, The Modern (NYC)

Perhaps the biggest key to making excellent dan dan noodles is to make your own roasted chile oil. When done right, it gets a rich, fruity, smoky flavor that none of the store-bought stuff can touch. It's really quite simple. Toasted Sichuan peppercorns have a sweet, citrus-like aroma with a mouth-numbing quality, while roasted chile oil brings on the heat.

The first great thing about making dan dan noodles at home is that you can customize it however you'd like. Personally, I like the chile oil of the Sichuan version, but I also love adding crushed roasted peanuts to the top. Who's to stop me? Some hardcore versions of the dish have the noodles quite literally swimming in a bowlful of chile oil. I like my oil to coat the noodles and pool up a bit in the bottom of the bowl.

"The one wine in the world that tastes good with most Asian food: German Riesling. If you have spice, there’s no better foil than a little bit of sugar. (I try to match the sugar with the spice—if you like it 4-star, get thee to an Auslese. The rest of us reasonable 2 star people will enjoy our Kabinett and Spatlese.) If you have sweeter dishes, try to get a Riesling that is just a tad sweeter than the dish in question. Even if the preparations are a bit simpler, there is often a salt component enhancing flavors. Generally stated, sweeter wines will cancel out the perception of salt without negating its positive effect on a dish. Consequently, the salt will also diminish the perception of sweetness in the wine, making everything just plain taste better. And if someone at the table says something snarky about sweet Rieslings, just flip it and order a Prosecco or slightly sweet Vouvray or Gewürztraminer—anything on the 'helpful side of dry'."— Chris Horn, Purple Cafe (Bellevue/Seattle)
