Spicy Summer Dishes

This recipe applies a Chinese technique to two decidedly Western ingredients, kale and frisée, with surprisingly good results. We cook them like any other hearty greens—adding the stems to a hot wok, followed by the leaves. There's no need for blanching, which makes this recipe super quick and leaves you with one fewer pot to clean.

You have to do ribs on the grill at least once in the summer, and if you're looking for something beyond your basic bottled barbecue sauce, you've come to the right place. Here, apricot preserves give the sauce a sweet, fruity flavor, and chipotle chiles add a contrasting earthy, spicy flavor to the sauce that tastes just as good when licked off your fingers as it does on the ribs.

Once grilled, hearts of palm take on a deeply nutty, sweet flavor that's almost like charred corn; marinate them beforehand and you add an herbaceous flavor note to the filling. Alongside a crunchy, spicy cabbage slaw and salsa verde , this is a dish that will satisfy whenever the taco craving strikes.

They don't always get as much attention as the noodles , stews , or barbecue , but stir-fries are a major part of Korean cuisine. If you need an introduction to Korean stir-fries, try this spicy-sweet dish made with pork shoulder marinated in gochujang (Korean chile paste) and gochugaru (Korean dried-chile powder).

There are all kinds of variations on the dish that you'll find in Chinese restaurants in the U.S. Some go the ultra-authentic, hardcore traditional route, while others remove some or even all of the heat from the dish, instead replacing it with a creamy sesame (or even peanut butter!) based sauce. To me, picking one version of dan dan noodles as the best is kinda like choosing my favorite Beatles album: It's a constantly shifting debate, noodle game collectibles|https://Noodleinsight.Com/ even with myself. Best plan is to just pick a path and run with it. This time I'm going for the more traditional approach. Obviously, modifying it for my vegan needs is going to alter that approach in practice (though not in spirit).

Chilaquiles are a classic Mexican breakfast dish that can be pretty aptly described as a fried tortilla casserole. Crisp chips are soaked in salsa (in this case a bright and tangy salsa verde made from tomatillos) until just barely softened but still mildly crunchy. This recipe combines black beans with charred corn, along with a few slices of avocado and a handful of toasted pumpkin seeds for a meal that's not only balanced in carbs, protein, and high in good green vegetables, but is crazy delicious to boot.

"When pairing with Chinese food, you're looking for wines that are spicy, soft, and on the richer side. Chinese food is a generous cuisine, bringing expressive and muscular wines is important. For Mapo tofu, you're looking for spice and energy to match the dish. Red wines from the Douro in Portugal would play well with this dish. Mushu pork has a crunchy and fresh tone. Cabernet Francs from the Loire Valley, Cote de Beaune Reds, and Austrian Blaufrankisch would be a good fit, offering bright fruit and a fresh nature. Peking duck needs some richness and sweetness. Try rich and bold California Cabernets or Grenaches from the Languedoc Roussillon. Experience this dish with a mature Maury (fortified wine from Roussillon)—a great combination."— Adrien Falcon, Bouley (NYC)

It's not easy making a vegan burger that doesn't come out mushy or bland or just plain boring. This one combines chickpeas, cashews, and barley along with fresh vegetables to form a complex, satisfying patty that will behave just like meat on the griddle or grill.

Although olive oil won't emulsify into a pasta-coating sauce like butter will, by adding a little cornstarch to the base, you create a sauce that clings to the pasta as well as any butter-based sauce, and with all the bright, vibrant, complex flavor of olive oil.

If you've eaten a typical dish of takeout orange chicken any time recently, you might recall an orange-tinted sauce with very little resembling fruit flavor. Here, we create better, more complex flavor in our orange sauce by incorporating citrus three ways: fresh orange juice, grated zest, and dried peel. That last ingredient adds a depth that you can't get from fresh juice and zest alone.

"The one wine in the world that tastes good with most Asian food: German Riesling. If you have spice, there’s no better foil than a little bit of sugar. (I try to match the sugar with the spice—if you like it 4-star, get thee to an Auslese. The rest of us reasonable 2 star people will enjoy our Kabinett and Spatlese.) If you have sweeter dishes, try to get a Riesling that is just a tad sweeter than the dish in question. Even if the preparations are a bit simpler, there is often a salt component enhancing flavors. Generally stated, sweeter wines will cancel out the perception of salt without negating its positive effect on a dish. Consequently, the salt will also diminish the perception of sweetness in the wine, making everything just plain taste better. And if someone at the table says something snarky about sweet Rieslings, just flip it and order a Prosecco or slightly sweet Vouvray or Gewürztraminer—anything on the 'helpful side of dry'."— Chris Horn, Purple Cafe (Bellevue/Seattle)food-salad-spicy-pan-hot-cooking-meal-pe
