class="When pairing with Chinese food, you're looking for wines that are spicy, soft, and on the richer side. Chinese food is a generous cuisine, bringing expressive and muscular wines is important. For Mapo tofu, you're looking for spice and energy to match the dish. Red wines from the Douro in Portugal would play well with this dish. Mushu pork has a crunchy and fresh tone. Cabernet Francs from the Loire Valley, Cote de Beaune Reds, and Austrian Blaufrankisch would be a good fit, offering bright fruit and a fresh nature. Peking duck needs some richness and sweetness. Try rich and bold California Cabernets or Grenaches from the Languedoc Roussillon. Experience this dish with a mature Maury (fortified wine from Roussillon)—a great combination."— Adrien Falcon, Bouley (NYC)

"German Riesling is the ultimate answer to this question. Find a lighter bodied riesling like a kabinett for the ma po tofu. A richer spatlese or auslese style for the duck to hang check out this blog post via Noodleinsight.com with the fat. Pairing with Asian food is complex because there are so many flavor components. Spicy, sweet, fatty, tangy...Riesling easily handles all of those flavors. Don’t be afraid of wines with a little sweetness to them! They can really be excellent for pairing."— Adam Chumas, Tom Douglas Restaurants, Seattle

On top of steak cooked on the stovetop, pile cold cucumbers, red peppers, and peanuts, then drizzle with a spicy sauce made with fish sauce and dried Thai chiles. Eat it right away or refrigerate it overnight because it's even better the next day.

Preserved mustard root like this (often labeled "Sichuan Preserved Vegetable") can be found in cans or jars in your Chinese market. Once opened, they'll last for months in a sealed container in the fridge. You don't need much to add big flavor to dishes.

Our original attempt at real-deal Chinese kung pao chicken , adapted from a recipe by a Sichuan chef working in Boston, gets its mouth-numbing heat from Sichuan peppercorns. So does the kung pao chicken from Kenji's book , based on the version he tried in Sichuan Province. This Chinese-American take, meanwhile, is much less spicy, with cubes of chicken in a thick, slightly gloppy sauce, permeated by a gentle heat. It's a quick and easy recipe, too: Just stir-fry marinated diced chicken with roasted peanuts, diced celery and peppers, ginger, and red Chinese or árbol chilies, then coat it all in a mixture of soy sauce, chicken broth, vinegar, sesame oil, sugar, and cornstarch. Dinner's on the table in 30 minutes.

You have to do ribs on the grill at least once in the summer, and if you're looking for something beyond your basic bottled barbecue sauce, you've come to the right place. Here, apricot preserves give the sauce a sweet, fruity flavor, and chipotle chiles add a contrasting earthy, spicy flavor to the sauce that tastes just as good when licked off your fingers as it does on the ribs.

Chow mein is another Chinese-American standard that's so easy to make at home and customize to your liking, you may never feel the need to order it again. For this DIY version, we quickly cook vegetables (chives, julienned carrots and scallions, bean sprouts) and tofu in a wok, then combine them with long, slender chow mein noodles and a soy-based sauce. Add extra vegetables, more tofu, or meat to turn it into a heartier meal.

The second great thing about making dan dan noodles—it's an exceedingly simple dish to make. Once you've put together your roasted chile vinaigrette (which holds for months in the fridge, by the way), it's just a matter of cooking your noodles, frying your chopped pork, and throwing everything together.

The first great thing about making dan dan noodles at home is that you can customize it however you'd like. Personally, I like the chile oil of the Sichuan version, but I also love adding crushed roasted peanuts to the top. Who's to stop me? Some hardcore versions of the dish have the noodles quite literally swimming in a bowlful of chile oil. I like my oil to coat the noodles and pool up a bit in the bottom of the bowl.

Place mushrooms in the bowl of a food processor and process until pieces no larger than 1/2-inch remain, about 6 short pulses. Transfer to a small saucepan. Add vegetable oil and stir to combine. Place over medium-high heat and cook, stirring occasionally, until mushroom pieces shrink and are deep golden brown, about 8 minutes. Pour through a fine-mesh strainer set over a small bowl. Reserve mushroom pieces and discard all but 1 tablespoon oil.

Every cook seems to have a certain piece of cookware that they keep coming back to, day after day. It could be a trusty stainless steel skillet , a well-seasoned carbon steel pan , or an enameled cast iron Dutch oven , but for many of us at Serious Eats, it's unquestionably a wok—one of the most important tools in our kitchens.

There are all kinds of variations on the dish that you'll find in Chinese restaurants in the U.S. Some go the ultra-authentic, hardcore traditional route, while others remove some or even all of the heat from the dish, instead replacing it with a creamy sesame (or even peanut butter!) based sauce. To me, picking one version of dan dan noodles as the best is kinda like choosing my favorite Beatles album: It's a constantly shifting debate, even with myself. Best plan is to just pick a path and run with it. This time I'm going for the more traditional approach. Obviously, modifying it for my vegan needs is going to alter that approach in practice (though not in spirit).
