Done right, takeout fried rice is a thing of satisfying, well-balanced beauty. But it's frequently served clumpy and over-sauced, or, worse, bland and oily. Making it at home gives you more control over the final dish, plus it's a great way to use up leftovers. Our approach busts a few myths—no, your rice doesn't have to be medium-grain, or day-old, for that matter. While this version calls for vegetables, like carrots and peas, you can easily bulk it up with pork , kimchi and Spam , Thai-style crab , chicken, or your protein and garnishes of choice.

We tend to prefer jasmine, medium-grain white, or sushi rice for this and all our fried rice recipes. Long-grain rice works, but it doesn't get the same chewy-tender texture as shorter varieties.

If you've never tried a marinated kale salad, it might just rock your world. Here's how it works. Take your raw kale, dress it with a standard vinaigrette, let it sit overnight in the fridge, and boom—what was once a tough, leafy green is now tender and crisp. The greatest part about it is that after marinating, the salad will last for days and days without losing its crispness. This salad also calls for chickpeas and onions, making it a hearty side or light lunch.

Perhaps the biggest key to making excellent dan dan noodles is to make your own roasted chile oil. When done right, it gets a rich, fruity, smoky flavor that none of the store-bought stuff can touch. It's really quite simple. Toasted Sichuan peppercorns have a sweet, citrus-like aroma with a mouth-numbing quality, while roasted chile oil brings on the heat.

Chow mein is another Chinese-American standard that's so easy to make at home and customize to your liking, you may never feel the need to order it again. For this DIY version, we quickly cook vegetables (chives, julienned carrots and scallions, bean sprouts) and tofu in a wok, then combine them with long, slender chow mein noodles and a soy-based sauce. Add extra vegetables, more tofu, or meat to turn it into a heartier meal.

Squash and carrots go very well together. They're both orange (duh), both have a great sweet-and-savory flavor profile, and both take well to conversion into creamy soup form. This soup, which calls for roasting the squash and juicing the raw carrot, is a little deeper, a little more complex.

The problem with so many steam-table iterations of this dish lies in the broccoli: It's too often mushy and bland. To keep it crisp and flavorful here, and get a good sear on the strips of beef without overcooking them, we stir-fry the ingredients over very high heat, using a wok or a wok insert over a grill.

Brush watermelon wedges with a mixture of honey, lime juice, and cayenne pepper, then grill quickly, just till the wedges show grill marks. It's so simple and such a creative way to enjoy the most summery of fruits, the juicy watermelon.

The second great thing about making dan dan noodles—it's an exceedingly simple dish to make. Once you've put together your roasted chile vinaigrette (which holds for months in the fridge, by the way), it's just a matter of cooking your noodles, frying your chopped pork, and throwing everything together.

One of the problems with ordering dan dan noodles at a Chinese restaurant is that you never know exactly what you'll get. Are they gonna deliver the hardcore Sichuan version swimming in red-hot chile oil and laced with pickled zha cai (mustard root) and mouth-numbing Sichuan peppercorns? Or can you expect the equally delicious but totally different Chinese-American version with more pork, a vinegary soy-based sauce, perhaps some greens, and a sprinkling of peanuts?

Grind a combination of beef and smoky, spicy Cajun andouille sausage for burger patties. Grill, then top with blue cheese and a sauce of mayo, ketchup, hot sauce, mustard, parsley, lemon juice, cayenne, horseradish, and garlic for the most spicy and flavorful burgers.
